Recipes: fast mini desserts!

Because I have been cooking and baking so incredibly much over the last few months, I thought I’d share some of the fastest and yummiest mini desserts for one or two people (potions) that you can whip up in under 20 min after eating dinner if you’re craving something sweet!

Chocolate Souflée

Protein chocolate soufflé recipe

Ingredients for four potions (or two big ones, both fine!):

  1. 90g dark chocolate
  2. 90g butter
  3. 3 eggs
  4. 115g white sugar
  5. 45g flour

How it’s done:

  1. Preheat your oven to 200C (celsius, it would be 390 in Fahrenheit!) .
  2. Melt the chocolate and butter (separately) and when melted, mix together.
  3. Add the rest of the ingredients and stir until completely mixed.
  4. Prepare four mugs (not your prettiest!), divide your mix and put it in the oven for 10 min. I like mine fluffy on top and a little liquid inside, but if you want it fluffy all the way, go with 15 min!
  5. Optional: put a little vanilla ice cream on top!

Apple Crumble

Ingredients for two potions:

  1. one apple
  2. 30g flour (3 1/2 cups)
  3. 25g white sugar (2 tablespoons)
  4. 30g melted butter (2 tablespoons)
  5. cinnamon and sugar for the filling

How it’s done:

  1. Preheat your oven to 180C/ 350F.
  2. Cut the apple into little squares and sprinkle some cinnamon and sugar over it, depending on how sweet you want it!
  3. Mix the flour, sugar and melted butter together. Don’t worry, it looks like very little dough!
  4. Take two mug and divide the apple squares. Then divide the dough and place it on top of the apple squares.
  5. Put in the oven for 25-30 min, depending on how you like your dough: I love it super crispy, tasting like shortbread and so I usually leave it in for 30 min!

Cinnamon Roll in a Cup

Vegan Cinnamon Roll in a Mug (Easy + Healthy) - Okonomi Kitchen

Ingredients for one potion:

  1. 60g flour (1/2 cups)
  2. 2 tablespoons of white sugar
  3. 1/4 tsp of baking soda
  4. a pinch of salt and vanilla (optional)
  5. 3 tablespoons of milk
  6. 1+ 1/2 tablespoons of melted butter (I usually just take a small piece disregarding the measurements!)
  7. For the inside: melt a bit of butter and add cinnamon and sugar (depending on how sweet you like it!)
  8. For the topping: heat two tablespoons of milk and add powdered sugar until creamy!

How it’s done:

  1. Mix all the ingredients (not for the topping and inside obviously).
  2. Prepare a bit of four on the table and roll the dough on a table until you have a “snake like” piece.
  3. Mix together the ingredients for the inside and pour them over the rolled-out dough.
  4. Try to roll up the dough, it can be difficult sometimes, but don’t worry, it doesn’t have to look great.
  5. Put the cinnamon roll in a mug and microwave for one minute/ one minute and thirty seconds, depending on your microwave.
  6. Heat the milk for the topping, add the powdered sugar and pour over the finish cinnamon roll!

Cookie in a pan + ice cream!

Ingredients for four potions (they’re big, so you can easily share with a group of friends!):

  1. Your favorite chocolate-chip cookie recipe/ cookie dough from the store.
  2. Vanilla ice cream

How it’s done:

  1. Preheat your oven to 180C/ 350F.
  2. Evenly place your dough onto a pan/ cake form and put into the oven for 20 min (to have it a little gooey on the inside).
  3. Divide into pieces, add ice cream and enjoy!

      1. I made the cinnamon roll in a cup, and it was delicious! It was a little sweet, but I think that next time I’ll put less of the topping on. Anyways, thank you so much for sharing the recipes! I’ll definitely make the cinnamon roll again 🙂

  2. These all look so delicious!!! I’ve yet to make the chocolate souflée, because I’m a little worried I won’t like it. I made a vanilla one and it was too eggy for my taste. But chocolate is always better so I might still give it a try. And I think I’m going to make the cookie in a pan tonight! It sounds super delicious 💕 Hopefully I’ll remember and actually make it lol.

    1. Thanks so much! And oh, the struggle I’ve had with a vanilla souflee! I tried it twice now after eating and loving it in a restaurant – and both times, the dough was completely awesome and super tasty, and the souflee turned out super disappointing. Not fluffy, like a plain cake and with no gooey dough left! But the chocolate souflee doesn’t taste like egg one bit, so hopefully you’ll enjoy that one!
      And did you end up making the cookie and if yes, did you enjoy it?

      1. No, I wasn’t able to! We don’t have any cookie dough mix at home, and I can’t even make it from scratch bc we don’t have chocolate chips either 🤦🏾‍♀️ But the next time we go shopping, I’m going to see if there is any mix, or at least get chocolate chips so I can make my own 🙂

  3. I’m loving these desserts. Chocolate soufflé looks fairly straightforward to make (which is always great). When you say mugs, you mean just ordinary coffee and tea mugs, right?

    1. Thanks so much! And yes, I use ordinary coffee and tea mugs… But I used some where there were pictures on them (the ones which you can order with a photography of your dog or family on it lmao) and the pictures started to melt after putting them in the oven multiple times! So I’d use simple white ones (like the ones from Ikea/Walmart!)
